A typical contour of the Lazio cuisine, especially the city of Rome, where this dish was invented. The artichokes are a classic dish, very simple to cook but at the same time able to enhance the aroma and flavor of this vegetable.

In the Jewish ghetto of Rome housewives cooked this easy but tasty dish. The original artichokes are prepared using the Roman artichokes, called "Mammole", because more tender and tasty. This dish was served especially during Yom Kippur, atonement party, a total fast day, dedicated only to meditation and prayer. After spending 24 hours of fasting, Jews usually eat artichokes and this is the reason why they are called "the Jewish style".
