There’s hardly a snack that exemplifies London’s love for a cuisine mash-up better than Freddie Janssen’s stilton and kimchi toastie, with its crisp sourdough packed with deliciously pungent English cheese and her own London-fermented Korean cabbage. You wouldn't think two such brash ingredients would make such good pals, but classic cheddar-and-Branston’s got nothing on this duo.
Freddie Janssen is one of London's premier picklers. You'll find her at Druid Street Market most Saturdays selling jars of kimchi and incredible ketchup, but do not visit the stall without ordering one of her toasted sandwiches.
